NUTTY TOFFEY POPCORN

I love all things popcorn and love a place in Columbus Ohio called Al’s Delicious Popcorn.  It really is an amazing place. This Nutty Toffey Popcorn is really easy to make too. And the cost is little as well.  

My sister makes this every year to give on her Christmas trays to friends and it is the most requested item.  Every year when my kids had a bake sale, I would make caramel corn, with pretzels and peanuts and I could sell out before any of the others and make my minimum for the band uniform or theater thing.

Popcorn, when my oldest daughter brought her Scottish Friend home she thought corn was animal feed until she tried my caramel corn with pretzels and peanuts.

My sister makes this every year to put on her Christmas trays and it is one of her most requested items.  I made it for the first time this year and it is really easy to make and add to my Christmas trays.

NUTTY TOFFEY POPCORN

INGREDIENTS:

10 Cups Popped Corn

1 Cup Pecan Halves, toasted

1 ⅓ Cups Brown Sugar

1 Cup Unsalted Butter

½ Cup Light Corn Syrup

½ teaspoon Cream of Tartar

½ teaspoon Baking Soda

½ teaspoon Rum Extract

DIRECTIONS:

  1. In a large bowl, combine the popped corn and nuts.  Set aside

  2. In a heavy saucepan, combine the brown sugar, butter corn syrup, and cream of tartar.  Stir until sugar is dissolved.

  3. Cook without stirring until a candy thermometer reads 300 (hard crack stage). Remove from heat, stir in baking soda and rum extract.  Immediately pour this over the popcorn and nuts and stir to coat the popcorn kernels. 

  4. Pour this into a couple of 10X10 sheet pans that are greased or lined with silicone mats. Press it down.  Cool and break apart.  Store in an airtight container.
