BISCUITS

I love a biscuit and these are some of the best biscuits I’ve ever had. They are flaky and soft and just fantastic. These bake up tall and beautiful.

I was in London, England for my oldest daughter’s graduation and made these biscuits for her roommates, all from Europe, who call cookies biscuits. They could not figure out what I was making. I told them it was an American Biscuit, a bread of sorts. There minds were blown when they ate them with jam and butter. I told them they could also put eggs and ham or bacon on them with cheese and make a breakfast sandwich. Minds blown again! It was a great sharing of good food.

Who doesn’t love a good, flaky, buttered biscuit? I know I love them!

BISCUITS

INGREDIENTS:

2 Cups Flour

1 Tablespoon Baking Powder

1 Tablespoon Sugar

6 Tablespoons Unsalted Butter, grated

¾ Cups Whole Milk or Buttermilk


DIRECTIONS:

  1. Grate the butter and chill it in the freezer for 10 minutes. The butter will make the biscuits very flaky.

  2. Preheat the oven to 425 degrees F. Line a cookie sheet with parchment paper and set aside.

  3. Combine flour, baking powder, sugar and salt in a large bowl and mix well.  Set aside.

  4. Remove the butter from the freezer and cut it into the flour mixture with a pastry blender or forks. Cut the butter in until the mixture resembles coarse crumbs.

  5. Add milk, use a wooden spoon or danish whisk to mix just until mixed, not any more than this or the biscuits will be tough.

  6. Transfer your biscuit dough to a well-floured surface and use your hands to gently work the dough together.

  7. Once the dough is together, flatten it some and fold it in half over itself and use your hands to gently flatten layers together. Rotate the dough 90 degrees and fold in half again, repeating this step  5 or 6 times. 

  8. Chill the dough for another 30 minutes. Then flatten it to 1 inch thick and cut with a biscuit cutter. Place biscuits ½ inch apart on the sheet. Use all of the dough. 

  9. Bake for 12 minutes or until the tops are beginning to just turn lightly golden brown. Remove from the oven and brush with melted butter if desired.
