HOT CHICKEN SALAD

This is a recipe that I have had for decades and that I forgot about, until my sister made it for dinner when she had us over. It was so good to have it again and it reminded me, I like this stuff.

This dish has a great texture with the water chestnuts, celery and almonds. It is a must try if you have not had it before.

This is a recipe I had not made for decades, and then, this March 2026 I went to my sisters and she had it.  I had totally forgotten about this recipe and really liked it.

HOT CHICKEN SALAD

INGREDIENTS:

3 Cups Chicken, cubed and cooked

1 Cup Sliced Almonds

1 8 oz. Can Sliced Water Chestnut, drained

2 Cups Celery, chopped

1 Tablespoon Lemon Juice

1 ½ Cups Mayonnaise

2 Cup Shredded Cheddar Cheese, 1 Cup reserved for top

1 10.5 oz can Cream of Chicken

½ teaspoon Pepper

Salt to taste

1 3 oz. Can of Onions or Potato Chips

DIRECTIONS:

  1. Preheat the oven to 350 degrees F. Spray a 9X13X2-Inch Pan with cooking spray

  2. In a large bowl, combine cooked chicken, almonds, celery, lemon juice, mayonnaise, 1 cup of cheddar cheese, cream of chicken soup, salt to taste, and pepper.  Spread into the prepared pan.

  3. Bake uncovered for 30 minutes. Sprinkle reserved 1 cup of cheddar cheese on top and then cover with the French fried onions, or potato chips and bake an additional 10 minutes
