Butter Pecan Cookies

These cookies are very basic but absolutely delicious. I love brown butter in cookies, and this one accentuates the nutty flavor of the pecans. So good.

Cookies are my go to dessert for things as they don’t require a plate, or any utensils.  Just eat them out of hand. Try these cookies.  They are not that hard to make.  Browning the butter does take a little time though. But it is so worth it! Don’t skip this part or your cookie flavor will suffer.

I love pecan cookies.  I love pecans in general. This is a very basic cookie but absolutely delicious. 

BUTTER PECAN COOKIES

INGREDIENTS

1 ½ Cups Pecans

1 Cup Unsalted Butter, melted and browned, and then cooled

1 ¼ Cups Dark Brown Sugar

½ Cup Sugar

2 Large Eggs + 1 Egg Yolk

1 ½ teaspoons Vanilla Extract

3 Cups Flour

1 teaspoon Corn Starch

¾ teaspoons Baking Soda

½ teaspoon Salt

½ Cup Heath Toffee Bits (optional)

Flaky Sea Salt for sprinkling the tops of baked cookies.

DIRECTIONS:

  1. Pre-heat the oven to 350 degrees F. Line cookie sheets with parchment paper.

  2. Melt the butter over low heat until it begins to brown. This takes about 20 minutes.  Then cool the butter to room temperature.  You can do this ahead of time. 

  3. Add eggs, egg yolk and vanilla extract to the butter/sugar mixture and mix well.

  4. In a separate bowl whisk together flour, corn starch, baking soda, and salt. Put this into the dough in batches so it is mixed in completely. 

  5. Chop the pecans coarsely and add to the dough.  

  6. Put the cookies two inches apart on the prepared cookie sheets. Bake for 10 minutes or until they are slightly under-done. Allow cookies to cool completely on the cookie sheets.

  7. After baked and right after they come of out the oven sprinkle a little flaked sea salt on each cookie.
