LEMON BARS
Lemon is one of my favorite flavors from lemon drops to lemon bars. It has a great spring flavor. Full of lemony life!
Weirdly, I seldom make these as I forget about them. These are actually easy to make too. I made these to take to a Wednesday night Bible Study I go to. Hope they like lemon too!
I love all things lemon. These lemon bars are so good and actually pretty easy to make too.
LEMON BARS
INGREDIENTS:
3 Cups All-Purpose Flour, 2 ½ cups for the crust and ½ for the lemon filling
⅔ Cups Powdered Sugar, more for dusting
½ teaspoon Salt
12 Tablespoons Unsalted Butter, melted
3 Tablespoons Lemon Zest, about 3 lemons
3 Cups of Sugar
8 Eggs, room temperature
1 Cup of Lemon Juice, fresh
DIRECTIONS:
Heat the oven to 350 degrees F. Line a 9X13 baking dish with parchment paper.
Whisk together 2 ½ cups of the flour, with the powdered sugar and salt, then pour in the melted butter and mix until combined. If you’d like, add a dash of vanilla extract.
Sprinkle the dough into your lined pan and press down into an even flat layer. Bake for 20 minutes.
Add the sugar to a food processor and add the lemon zest. Pulse until the lemon zest is combined with the sugar. The sugar will be a light yellow.
Add the sugar and remaining ½ cup of flour to a large bowl and mix well. Pour in the lemon juice and add the eggs and mix very well until completely combined.
Pour this filling into the slightly cooled but still warm crust and bake for about 25 minutes until the filling is just jiggly. Remove from the oven and let cool for 1 hour. Chill for 2 hours more.
NOTE: These can be made ahead of time and refrigerated for several days. You can cut these into bars and wrap and freeze them too for up to 3 months.
