COWBOY COOKIES
Cookies, a great alternative to cake in my opinion. You don’t need forks, plates, or anything just pick one up and eat. So easy. So many varieties of cookies too.
These Cowboy Cookies were my two daughters’ favorites when they were growing up. It is essentially a Chocolate Chip cookie with oatmeal in it. They are really pretty fantastic.
You can do this, you can make your own cookies so easily. Baking is science. Simply follow the recipe.
My two girls, when they were little, loved these cookies. They are very much like a chocolate chip cookie only with oatmeal in them. They are really good.
COWBOY COOKIES
INGREDIENTS:
2 Cups Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
½ teaspoon Salt
1 Cup Butter, softened
1 Cup Sugar
1 Cup Brown Sugar, packed
2 Eggs
1 teaspoon Vanilla
2 Cups Rolled Oats
2 Cups Semi Sweet Chocolate Chips
DIRECTIONS:
Pre-heat oven to 350 degrees F. Cover baking sheets with parchment.
Sift together the flour, baking power, baking soda and salt. Set aside.
In the bowl of a stand mixer, cream together the butter and sugars until light and fluffy. Beat in the eggs and vanilla. Gradually stir in the flour mixture. Stir in the chocolate chips and oatmeal.
Drop by rounded teaspoons or a cookie scoop, onto the parchment covered pan, leaving at least 2 inches between cookies.
Bake for 8 to 10 minutes in the oven. Allow cookies to cool in the baking sheets for 5 minutes before removing them to cool completely on wire racks.
